  • 1 can (142g drained) Trader Joe's canned calamari in brine, drained
  • 2 thick slices (about 80g total) sourdough or ciabatta bread, sliced
  • 15g (1 tbsp) capers, drained
  • 15g (small handful) flat-leaf parsley, finely chopped
  • 1 medium (zest + 2 tbsp juice) lemon
  • 1 clove (3g) garlic clove
  • 14g (1 tbsp) extra virgin olive oil
  • 1g (pinch) chili flakes

Instructions

    Drain and pat the calamari completely dry with paper towels — this is key for getting any colour on it.

    Mix the capers, chopped parsley, lemon zest, lemon juice, chili flakes, and half the olive oil in a small bowl. Season with salt and pepper and set aside.
